These luxurious cookies were inspired by BBC Good Food. We didn't have any chocolate chips so we had to be creative. When I say 'we' I mean me and my sister. As a result of the COVID-19 lock down we couldn't go shopping just for some chocolate chips. https://www.bbcgoodfood.com/recipes/vintage-chocolate-chip-cookies

Instead we found some deluxe dark chocolate. We simply broke up the chocolate into small pieces and added it to our mixture. You can add in as little or as much as you want but me and my sister are chocolate lovers so we added a lot.

This worked better than I thought it would and I will definitely use dark chocolate in my cookies again. The recipe said to put them in the oven for 8-10 minutes but I put them in for 12 minutes on a heating of 180 degrees and the results were spectacular

Whenever I make cookies I always have a problem with them being too hard and find it difficult to get the timing right. This time however they were the perfect consistency ( light and fluffy but golden on the outside.) I noticed that when the cookies are cooling they harden so if you leave them in the oven for too long they will end up being harder than you expecte

These cookies were the perfect accompaniment for a nice cup of tea!

Tilly's chilli

To make this scrumptious meal, I used Tilly Ramsay's cook book. I have used this book for many meals and I highly recommend using it...
