Birthday Breakfast Pancakes

I'm constantly making pancakes but this time I decided to have a go at making fluffy pancakes. These are thicker and softer than ordinary pancakes. Make sure you don't over mix the mixture as it's okay to have some lumps in it. Don't panic if your mixture seems quite thick and firm. It's not as runny as ordinary pancake mixture. When putting your mixture into the pan, don't put too much in because it will become too doughy inside.

You can stack them up and then add any toppings you to your liking. I drizzled maple syrup over my towering stack of pancakes and topped it with fresh raspberries.
