It was my sister's birthday and as we couldn't go out due to Covid 19, we decided to make our own afternoon tea. Before this, I decided to make some fluffy pancakes for my family. If you want find out how to make them, read my blog post about Birthday Breakfast pancakes.

My afternoon tea included a range of different sandwiches including our refreshing cucumber sandwiches on a tasty seeded bread,

For desert we had luxurious flapjacks coated in chocolate, shortbread pieces and our home made scones. To make these, we used the BBC Good Food recipe. https://www.bbcgoodfoodme.com/recipes/classic-scones-with-jam-and-clotted-cream/

They are quick and easy to make but it can be hard to achieve the right consistency. When rolling out your dough, it's important to make sure that it's not too thick, as your scones will rise in the oven. Don't be afraid to cut one in half to check that it's cooked because while the outside seems golden, it might not be cooked inside. This will be a problem if your mixture is too thick. After you've let them cool, you can enjoy these delightful scones with jam and cream!

To make this scrumptious meal, I used Tilly Ramsay's cook book. I have used this book for many meals and I highly recommend using it...
